The original plan was quite simple - a small wellness and nutrition center on the west side of Lancaster. One thing led to another,
and the end result is one of the most satisfying and healthy eating establishments in the area.
The Health Tree, located in the Albertson's
plaza at 30th St West and Avenue L, has caught on quickly with diners looking for a healthy alternative. The establishment is the
brainchild of two sets of brothers with deep local roots; Mark and Todd Coleman, and Al and Rod Sanchez.

We did a litte web surfing, trying to identify the best online sources for calorie counting. We considered many aspects of the available sites, including ease of navigation, depth of information, and clarity of data. And our winner is...
Especially useful is the "food" directory. Go directly to calorieing.com/food and fill in the search box with a food of interest. The search function is very flexible, and the display even more so. You can also search on restaurant chains - a very useful feature for many of us.
Al Sanchez got the nutrition side going and quickly saw the potential. Looking to expand, Rod and Al asked long-time friends Todd and Mark Coleman to join the venture. The four partners began developing the idea of a larger nutrition center on the west side. “Then, after finding a unit to lease, we thought, why not serve coffee too,” said co-owner Todd Coleman. “Then we decided, that may not be enough. Let's serve smoothies too.
That led to our final vision of a small, health-focused restaurant and nutrition center, serving all of that along with sandwiches and salads as well.”
The partners brought in Chef Amber Freeland to develop a menu. The result is a great selection of gourmet salads and a variety of
well-chosen sandwiches. Freeland has stayed on as General Manager.
Coleman says their most popular items are the barbecued chicken
salad and their Tom's Basil sandwich. The smoothies have been a big hit as well. They also have an excellent selection of Volcanic
Red gourmet coffee.
The partners have been pleasantly surprised with the early success of the restaurant. “We've done very little advertising,” said Coleman,
but we're really drawing a great crowd for lunch every day. It's an earthy atmosphere in here, and I think it makes customers feel
very comfortable. We provide a relaxed, pleasant, and clean environment.”
Some live entertainment has also helped build a unique identity
for the restaurant. Javier Gutierrez performs on Friday nights at 6:30 pm,
Ingredients
- 1/2 onion, chopped
- 2 tbls cooking oil
- 3/4 cup catsup
- 3/4 cup water
- 2 large cans sauerkraut
- 10-12 franks
- 1 tbls brown sugar
- 1 sp prepared
mustard
Instructions
- Saute onion in oil until tender.
- Add catsup, water, sugar, and mustard, and bring to a boil.
- Drain sauerkraut and put in large casserole
dish.
- Slash franks, and place on top of sauerkraut.
- Pour on sauce mix, and bake uncovered at 350 deg for 30 minutes.
and a variety of performers appear on Saturday nights. Gutierrez plays acoustic guitar, and performs Spanish Cantata and Flamenco.
He also performs annually at the Poppy Festival. His music fits well with the over-all theme of the restaurant - comfort, atmosphere,
and good food. Wireless internet is also available for patrons.
The owners are now developing plans to expand the entertainment to
Wednesday and Saturday evenings. They are also receptive to literary readings and small group meetings.
“We want to be part of the
community,” stressed Coleman. “All four of us were raised here in the valley, and attended Quartz Hill High School. We will cater
to the needs of the community in any way we can.”
